Ingredients

  • 1 1/2 lbs (680 g) lamb shoulder, cut into 1-inch cubes
  • 1 cup (170 g) canned chickpeas, rinsed and drained
  • 2 cups (370 g) basmati rice, rinsed and soaked for 30 minutes
  • 1 cup (240 ml) plain yogurt
  • 2 medium onions, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 2 tomatoes, chopped
  • 1/2 cup (15 g) fresh cilantro, chopped
  • 1/4 cup (15 g) fresh mint leaves, chopped
  • 3 tbsp vegetable oil or ghee
  • 2 tsp garam masala
  • 2 tsp ground cumin
  • 1 tsp turmeric powder
  • 1/2 tsp cayenne pepper (optional)
  • 4 cups (960 ml) water or lamb broth
  • 1 cinnamon stick
  • 4 green cardamom pods
  • 4 cloves
  • Salt to taste
  • Freshly ground black pepper to taste
  • Juice of 1 lemon

Instructions

  1. Prepare the lamb marinade In a large bowl, combine the yogurt, garlic, ginger, garam masala, cumin, turmeric, cayenne pepper, salt, and pepper. Add the lamb cubes and mix well to coat. Marinate for at least 30 minutes, preferably 2 hours, in the refrigerator.
  2. Cook the lamb and onions Heat 2 tablespoons of oil or ghee in a heavy pot over medium heat. Add the sliced onions and cook, stirring frequently, until golden brown, about 10 minutes. Add the marinated lamb and cook until browned and mostly cooked through, about 15 minutes.
  3. Add tomatoes and chickpeas Stir in the chopped tomatoes and cook until soft, about 5 minutes. Add the rinsed chickpeas, cinnamon stick, cardamom pods, and cloves. Cook for another 5 minutes to let the flavors combine.
  4. Prepare the rice While the lamb mixture is cooking, bring 4 cups of water or broth to a boil in a separate pot. Add the soaked and drained basmati rice and 1 teaspoon salt. Boil until the rice is about 70% cooked (firm but not fully done), about 6-7 minutes. Drain well.
  5. Layer and cook the biryani Remove whole spices (cinnamon, cardamom, cloves) from the lamb mixture. Layer half of the partially cooked rice over the lamb and chickpeas in the pot. Sprinkle half of the chopped cilantro and mint leaves over the rice. Repeat with the remaining rice and herbs. Drizzle lemon juice over the top.
  6. Final steaming Cover the pot tightly with a lid or foil to trap steam. Reduce heat to low and cook for 20-25 minutes, allowing the rice to finish cooking and absorb all flavors.
